I mailed checks to several people a month ago. Within two weeks, all but one had deposited them. I have no reason to doubt this contractor hasn't received the check (it hasn't been deposited), so what is an appropriate wait time, and the procedure for stopping payment and reissuing payment, please?

In my experience, and if the contractor is willing to wait, I would give it sixty days total. If the check has still not arrived, issue a new one and then contact your bank to put a stop payment on the original one. There may be a fee for stop payment depending on the bank.

This has happened to me several times --- thanks USPS. Since it costs me $25 to stop payment on a check - I wait 30 days from when I put the check in the mail. It USUALLY shows up.

I assume you have contacted the contractor in question to ask whether they have received your check. That's the first thing I would do before stopping payment and issuing a replacement check,
