Supposing I have a friend who's an animator who works a restaurant job and wants to get me to do VO for a spec commercial she's making for said company, what are the dangers of lending my voice to the project? If they own my intellectual property, can this be used against me, especially conflict-wise?

No dangers as it is your work by default and permission to use must be given by you. Should they use it in any way without your prior consent they have a problem not you.

I'd also go so far as to suggest that perhaps as much as 50% of the things an average v.o auditions for are really "spec" and don't have a green light.

Very hard to tell if that online audition isn't actually for somebody's student project. (I am on the advisory board to some Advertising Degree programs, and had students confess in the past that they did this)

In many other case, it may be something to run by the clients or even to use in a pitch to get somebody's business.

It certainly isn't right, but only pushes further that many voice talent are like mushrooms; kept in the dark and covered with manure.

I'd say the only "danger" in this process is to your friendship. So make sure you discuss in detail with your animator friend what can and can't be done with your VO before you provide it.
